This is Phil's barley wine which has been sampled at many a club function. If Foghorn is a 1 and Bigfoot is a 10, Phil says this batch is 2 or 3! He's still experimenting with hops but here it goes...

Ingredients:

20# Golden Promise (or any pale malt)
2# Munich
2# 60L Crystal
2# Biscuit
3 oz 7.5% NB (60 min)
0.75 oz 5.0% EKG (60 min)
0.75 oz 5.0% Fuggles (60 min)
0.5 oz EKG (5 min)
0.5 oz EKG (2 min)

O.G. - 1.098 (and 1.036)

From this I have been able to obtain close to 5 gallons of 1.098 for a barley wine, and 5 gallons of 1.036 for a bitter. I mashed the grain in two equal batches, and ran approx. the first 3.5 gallons from each batch into one pot for the BW and the last 3.5 gallons from each batch into a second pot for the bitter. ( I take gravities every gallon so I could estimate how much to collect for each batch.)
